we've had guineas for a couple years now and i've always wondered why do they chase each other around at full speed

The chasing is normal breeding season behavior. Usually it's the males chasing each other, showing dominance for the breeding season, and some people also say they are showing off for the Hens (girls like jocks you know, lol).
