Had Dinner w/ our first Meat Bird

I just cooked another one of my meat birds last night. Previously I had cooked them at 20 min/lb, as you do store bought chicken. This left them extremely over cooked.

So this time, I cooked my 8 lb stuffed bird at 300 for two hours covered, with a cup of water in the bottom of the pan, removed the lid for 15 minutes more (stuck in the meat thermometer several times). I also covered the wings and legs with tin foil. this bird was the best bird ever!

But even my overcooked birds, I would not have considered them dry by any means. they truly are the best chicken I have ever tasted. So worth it!

Also makes the best pot of soup in the world too. That's supper tonight--chicken noodle soup with homemade bread.
