The family and I went on vacation and the vacation part was great however the breakfast was not so much.

It is still makes me sick to talk about but I had to eat factory eggs for over a week.

Due to dietary health restrictions eggs, meat and fruit where the only choices.

I could tell right away the taste difference. I actually had a hard time holding it down a few times. Just seeing them pour the pasturized eggs out of a bag was just wrong.

Since I have been home I have not eaten any eggs. I'm just egged out.

I have been spoiled by my backyard chickens. I need a good egg recipe big time.

I am sorry you had to endure factory eggs! What type of egg recipe are you looking for? Dessert, breakfast/brunch? A recipe that uses eggs in the mix or the egg is the main part of the recipe?

Hmm, can't think of any recipe.. I usually just fry or scramble them for breakfast, nothing fancy. I just wanted to say how sorry I am that you had to go through that!!

ok this is my favorite recipe. I know you said no milk, and this does contain cheese, but you can use a vegan "cheese" substitutte.
It is a crust-less spinach quiche (you can add other veggies to it as well, once I added 1/2lb of turkey sausage to it, so it is flexable)

Ingredients
1 tablespoon olive oil
1 onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
5 eggs, beaten
3 cups shredded Muenster cheese
1/4 teaspoon salt
1/8 teaspoon ground black pepper


Directions
1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
2.Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
3.In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
4.Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving

Or how about this:

a hashbrown skillet

Ingredients
3 medium potatoes, peeled and diced
1 tablespoon butter or margarine
1/4 cup chopped onion
1/4 cup chopped green pepper
1 cup cubed fully cooked ham
3 eggs, beaten (4 eggs if your eggs are smaller)
salt and pepper to taste

Directions
1.In a skillet, saute potatoes in butter until tender and golden brown. Add the onion and green pepper; saute until crisp-tender. Add ham, eggs, salt and pepper. Cook until eggs are completely set, stirring occasionally.

Make Migas!

Fry corn tortillas (1 per person) one at a time in a little vegetable oil in a skillet until crisp then drain on paper towels while you:
Saute green pepper & onion in the same skillet until softened.
Crumble the tortillas - smallish pieces - and add them to the skillet
Add beaten eggs (2 per person) to the skillet & scramble until set to your liking.
Throw shredded cheese on top, turn off the heat & let the cheese melt.
Serve with sour cream & salsa : 9
 
thanks for the recipes, I got an EGG recipe book from Borders it was 60% off. I have been going through it looking for a good one to use. The eggs are pilling up so I need to start eating them. Saturday or Sunday looks like the day I will start eating eggs again.
