I found an interesting recipe in that egg book I bought. I had the ingredients so we tried it this morning. The whole family loved it and it was a unanimous vote to be made again the future. It going to sound odd but it was very very good.
Pear & cinnamon omelet
Serves 2
1 ripe pear
Juice of ½ lemon
4 tbsp butter
1//3 cup of sugar (I used honey)
1 tsp cinnamon
¼ cup of white wine vinegar ( used white vinegar)
Salt and pepper
4 eggs
Peel, quarter and core pear and slice into thin slice toss with lemon juice
Melt butter in skillet, add sugar or honey and cook on medium heat for about 2 minutes until boil and turn a pale caramel.
Add pear, sprinkle with cinnamon, turn them over with a fork every few minutes. When they turn amber color add the vinegar and cook for another 3 minutes. Set aside to be added to omelets later.
Beat eggs in a bowl add salt and pepper to taste. Make an omelet, put pears in the middle, fold it or roll it up and serve.
Enjoy.
