My hard boiled eggs stick to the shell when i try to remove them. Usually they break or get a crack thru the white to the yellow. This makes a mess if i try to pickle the eggs. My mom, an older gal, said it's because the eggs were too fresh. Like if they were kept a week or 2 in the frig this wouldn't happen. Is that true? What can I do to make them come out solid? I let them cool all the way before peeling, but still, most will crack, leaving the yellow to disolve in the vinigar if I try to make pickled eggs.
 
Older eggs are definitely easier to peel. That said, I've hard-boiled eggs gathered just that day and peeled them easily. The key is to quickly cool them. Put room temp or fridge eggs in water out of the tap. Bring to a boil, set your timer for 8 minutes, and the second it goes off, pour off the boiling water and fill the pan with cold tap water. Let them sit for 10 seconds, dump that water, refill with cold water and this time let set for 30 seconds. Dump again and refill with cold water. Your eggs should peel very easily at this point.
 
To hard boil my fresh eggs I put them in a pan big enough to cover the eggs with at least an inch of water, add a pinch of salt and a good glug of vinegar. Then bring to a boil. I turn them off once boiling, and put the lid on and let sit for half an hour. Then I pour off the hot water and rattle the pan around a little to make some small cracks in the shells. Next cover with ice and fill with cold water. Once cold, I put them in the fridge over night, still in cold water. Next day, pour off water, jiggle the pan around to crack the shells more, and start peeling. It has to be done a day in advance, but works for me every time.
