hard boiled eggs?

I've read posts about how to tell fresh eggs and those about cracking open eggs to find developing chicks. Now I have to ask...If I'm boiling eggs to eat, how do I know if they are "good"? Can I candle them first or something?

Candling them is a good idea to make sure. I ALWAYS gather my eggs every day to make sure I don't have a very unpleasant surprise.
