Has anyone ever heard of canning a chicken?

I never had. Until this past weekend at the flea market.

We were admiring a vendors green eggs...$1.50, free-range mind you,
and she began to tell me how they "can" their chickens instead of the
freezer. Claimed a three to four year shelf life.

I've never heard of such a thing. How about you?

**My wife had never seen a real green egg before. Said it was cute but
she didn't think she could east one? I told we aren't supposed to eat the
shell...

*** An aunt married into our family some many years ago. Pretty woman
but not the best cook. She made a cake, but it was crunchy...when asked
why, she explained the directions called for "whole eggs" so she used the
"whole egg"...including the shells.

Yeah, she was from the north.
 
Sure. Canned meat is a great way to preserve meat if your power supply is questionable and your freezer might go out.

Ever had canned wild goose? Delicious! As is canned venison.

Odd. I've never heard of canning meat before. And I thought I knew
everything.

Where do you get the big cans?

Seriously...can someone post up some simple directions to canning
meat. I've just never heard of that before.
 
Shortlist of supplies needed

Pressure Cooker
Jars
Lids
Seals

Thats about it in a nutshell.

Each recipe so to speak will give the times and pressure for what you are canning. We can 200+ quarts of beans, beats and many other veggies along with 100 or so quarts of Venison, chicken stock, soups ...you name it. Search goggle for "canning chicken" and you will get tons of how to's with exact numbers and step by steps. My oldest son wont touch store bought beets but will eat an entire quart of ours...

Not to mention we do jelly and jam every 3rd year unless we see a bad crop then we may do every other. Apple sauce, apple butter...heck we are only a few weeks away from strawberry time!

Kentucky born...southern Ohio is as far North as I dare go.

But I been all the way north a time or two....I retreated back
to safety.
 
While I dont know how to can anything (but plan to learn very soon) it makes sense to me that you can can chicken. I buy chicken in tin cans from the grocery store all the time, so it must be do-able, right?
