Any advice on assisting. If still not progressed further by say 5 am should I start helping? Or is that too long to wait?

5 am would be fine. Assisting isn't something you want to do with no sleep.

I've only hatched chickens. I usually assist after 24 hours provided they've pipped in the right spot. The longest I've seen are malpositions that have pipped the wrong end of the egg. I give them a full 48 hours before I help some hatch on their own even on the wrong end.

I think the latest I helped a stuck chick was at around 29 hours, it still hadn't absorbed it yolk all the way because of how it was positioned and ended up dying.

It takes a while to get used to assisting, knowing when to help is hard, and not blaming yourself when you've done everything you can and they still die is really hard.

Oh WOW, That's cool! I've considered setting store eggs before, but have never done it. All the eggs here have to be washed and sterilized before going to the store shelf so it's not likely they'd grow even if they had been fertile before.
