Hatching Eggs

I was wanting tips on hatching chicks becasue we are about to start some. I read serval things on hatching eggs but the vary alot. Here are some questions I want to start off with

Humity level-
Why do some eggs hatch eariler than 21 days?

Temperature being a bit high can sometimes cause eggs to hatch a little early but Im not sure od other reasons. Hopefully others will chime in soon.
