Update...
We had 49 fertile eggs in the 3rd set. 44 hatched. 90% is awesome!!
However, 3 were showing severe neurological symptoms. It actually looked like they were having seizures. We decided to cull them, and put them out of their misery. 1 seemed to have not fully absorbed the yoke sack, but was OK otherwise. About 24 hours after hatching though, it started acting lethargic. It ended up dying a few hours after the symptoms started. I think it was actually it's intestines protruding because the umbilicus did not fully close.
Not sure if the birth defects were caused by the fluctuation of humidity, but they did have it raised and lowered twice during gestation. My gut says yes...
