Have any of you ever made turkey sausage?

I'm not much of a meat eater...actually, I don't eat it at all, but I feed some to my family. I would like to raise some turkeys
next year and have some of it made into turkey sausage. I discovered the other day, when I cooked one of my extra roosters
that the meat was VERY lean and I would think that a free ranged turkey would be similar. I would much have them eat
turkey sausage from my backyard than pork sausage!
