Have to dispatch BEFORE sending to processor...

have 13 hens to dispatch before taking to processor...what is the procedure? dispatch and bleed out, put in ice chest on ice until all dispatched, bring to processor....Is this proper procedure? can they be processed in rigor? they will be plucked, cleaned and wrapped for freezer....I will not freeze right away, will let REST in fridge for at least 3 days.. will check to make sure rigor is over....does this sound right....? answer soon please as the processor will call soon....(will bring immediately to the processor after deed is done..) Has anyone ever done it this way when having a bunch to process at one time..? Would do it all myself but fractured my arm in 2 places...want to get it done before REAL Louisiana summer happens...they will loose weight in heat...Thanks you...G
 
thank you for your wisdom, will do that today, hopefully will make contact....did you ever have to do this, dispatch so many before processing?
 
This sounds really odd to me. Why isn't the processor killing them?

my thoughts too.... I would think taking them live to the processor would simplify things all around. Not sure how it would work trying to scald/pluck etc birds that had been deceased for a while. But then again, I'm a newbie at this, so I only know what I've read. :)
 
It is illegal for a processor to take dead animals in most states. Wild game is the exception. I would bleed them in his parking lot and hand the carcass to him if he won't kill them.
Even with placing the birds on ice the cavity and meat will be hot for a long time, and that is a problem. Remember the feathers are insulation.

The actual killing is usually the hardest part for most that are new to this. If you are willing to "kill" the birds, plucking and eviserating aren't that hard. I learned how to process via BYC info. I had nobody to help (the hubby is squimish) and nobody to mentor me in the process.

I have found that most people are much more comfortable dealing with a dead animal. So, again, if your killing it, why not complete the process? That way, you know how the carcass and meat were treated.

That sounds CRAZY! After dispatching a chicken I typically want to get the guts out as quickly as possible and cool the body cavity.....tough to do with the intestines still in place and decomposition begins almost immediately. With the fractured arm problem, I'd look for another processor if I couldn't process them myself. As for that REAL Louisiana summer, being from there originally, I can attest to late August heat and humidity.

BTW, how was crawfish season this year?
