Head eaters?

Last year i had a peacock named Miss Peacock and a young cockerel. I woke up one morning and found the peacock lying by the coop's gate who head and neck completely missing. Nearby was a small organ of some sort which i belief came from the cockerel who was nowhere in sight.
what kind of animal does this sound like?

Parts Missing
A dead bird found inside a fenced enclosure or pen with its head missing is likely the victim of a raccoon that reached in, grabbed the bird, and pulled its head through the wire.....When you find a bird dead inside an enclosure with its head and crop missing, your visitor was a raccoon. If the head and back of the neck are missing, suspect a weasel or mink.

I am sorry for your loss. Obviously there are other predator that could do this, but my money is on a Coon.​
 
I've had many chickens killed in this same manner. The predator doing it turned out to be an owl. It would come in the open pen door and kill the chicken while they were on the roost. Don't know if an owl is your problem though, but in my case it was, and it would just eat the head. I make sure door is closed at dusk now. Hope you find out whats getting yours. Sorry.
