Healthy Eggs

Added benefit of free ranging for me is that it cuts down on the feed cost. They still eat some feed.

Considering how much I like hatching I don't think losing some birds to predators will really be a big deal. It just means I can hatch more.

For me the taste difference is pretty subtle, but I did notice a HUGE difference when I use our fresh eggs for baking.

I made a genoise with my daughter and it was so light and fluffy, it was really remarkable. I've also noticed that when I make souffles it takes no time at all to go from liquid egg white to stiff peak stage - like 2 minutes instead of 4.

I like that
