Heat Sinks in Incubators?

I have been reading a lot of the DIY incubator threads and saw reference to "heat sinks" in a couple of threads with no real explanation of their function.

One thread used baby food jars of water, and it seems that it would take up space, but if it helps hatch success, it seems it would be worth it.

Could someone please explain different methods and the function and importance (or not).

exactly. you can use anything which will absorb the heat as the temp is rising and then let it go as it's dropping. water jars seems to be the most common, walkswithdog used tiles on one of hers...

honestly i'm not sure how common it is for people to use them. my temp swings from 99.3 to 99.7 so i didn't bother with anything but if you put together a bator and find your getting big swings then it's one way to try and fix it.
