What are the nicest, most docile, medium sized, egg laying breeds, that will tolerate the heat here in S. Louisiana?

Ok, we got our chicks two days ago. They're one week old Easter Eggers although the feed store said they were Auracanas (sp?). They are three and are super cute. They're allready jumping out of the little brooder we have for them, so I'll be constructing their coop this weekend. I'll be adding a run to a xl dogloo someone gave to us. I do have one concern, one of them seems to have diarrhea. I thought it was because of the vitamins in the water that I first gave them, some of them went back to normal poop but one still has it. It is watery brownish redish. Should I be concerned? They are acting fine. I've been reading books, but haven't found anything about diarrhea.
