Hi! Greetings from San Antonio! I raise Jersey Giants in my coop. They are large, hardy, meaty birds that take a while to mature , but their large eggs and meat are worth the care and wait. As for the eggs...don't do much other than dust them off if too dirty. I generally get them from the nests and place in the fridge until ready to eat. Good luck!
