There is no breed with the best roosters. They are all individuals and you can find "good" and "bad" roosters among all the breeds.
What are you looking for in a rooster?
Amberlinks were designed to be high production birds. These mixes generally have shorter lives than heritage breeds as they succumb to reproductive issues much earlier in life.
For a rooster I came down to 2 but don’t know which is better a speckled Sussex or Brahma

There is no single breed of rooster that will guarantee you get a "good" rooster. How one defines "good" is subjective.
I suggest you start looking around for a rooster that is being advertised for rehoming. One that had been raised in a flock of older birds. One that had proven he isn't human aggressive, is gentle with the hens and alerts appropriately.
