Like somebody above said, I think if you are able to incubate the eggs yourself then do that. If you can't then just take them away.

I don’t know how to destroy eggs. Especially with embryos or nearly formed chicks

Take them out for under her and put them in the garbage to go to the landfill. They will die in the shell.

If the eggs are only a week or so into incubation, they won't be formed chicks.
It sounds like you just want to be kind, which I can understand. But an embryo in early stages of development will not feel pain. If the owner doesn't want them hatched, and they're only in the early stages of life, there's nothing you can do, or should do, except remove the eggs. If you want to keep the eggs and put them in an incubator, then you'll need the owners permission.

If you post photos of candling them, we will be able to see how far along they are and advise you accordingly
