HELP..GOATY goat MILK!! :(

I talked to a man that I know who made a goat cheese for a living for 20 years. His advice for the best mik was
Clean the udder best you can before and after milking.
Clean hands between each goat.
Feed the best alfalfa hay you can get or aford. Feed whole grains and stay away from expensive store bought feeds.
Watch how fat your goat gets. You don't want them overweight.
The Most important thing is how you handle the milk. The tempature of your milk will efect the taste. Get it cooled and stay away from tempature changes when possible.
Cheese is easey to make and just as easey to mess up. IF YOU WANT TO MAKE GOOD CHEESE FIND A MENTOR WHO KNOW HOW AND IS WILLING TO TEACH YOU.
 
uh oh, 2nd person saying the milk tastes "off" i want goats so bad, and my dad says: ok but we gotta profit off of them. so i'm like: no problem! We'll sell the babies, save money on milk, save money on: Cheese, lotion, We'll make tons of profit! then i started hearing all these people saying: ewe, don't milk goats, they're for pets, not for milk, some saying: I tried some, and that was enough for me!!! AHHH HELP! I want Nubian goats ( Those ears!!! ) does anyone know what Nubian milk tastes like? is it good? is the "goaty" taste, ok? we where planning on keeping them in a cage at night and them free-ranging all day..... uh oh..... so weeds an grass make it taste weird huh?...... thats very heart-breaking... :(

If you pen the goats up for a couple hours or so before milking, that should take care of any off flavors caused by weeds. Bear in mind that certain (but not all) lines of Toggenburgs produce terrible milk. This trait is hereditary. Nubians seem to consistently produce good milk and, with the exception of the Toggs I mentioned, all of my goats produced good milk. The milking utensils must be very clean and the milk needs to be chilled quickly. Raw milk should be consumed within a couple days or so because due the action of enzymes it may become rancid (goaty). Pasteurization kills those enzymes. Hope this helps.
