I back my escapees into a corner and grab'em. If there's not a corner handy, I make one- sawhorses, tarps, paint buckets, yard tools, whatever I can prop up into a barrier. Then think like a herd dog and gently urge them into the corner. Grab 'em fast, tuck under your arm and exit the stage! Pet the hen, so she doesn't panic. Pop into the pen and/or coop, and hope she doesn't remember they next day!
My DH finds the whole thing highly amusing to watch, because I use old curtain rods as arm extensions when herding.
