It could be Wry neck. I don't really know what it is, but it causes the neck to be in an S shape.

Whenever i try to straighten her neck out she starts to really relax..is there maybe something in her throat? or as mention wry neck?

A month? It sounds like hiccups. Look up chicken hiccups, and you'll see some videos. I'm not sure that hiccups are relevant in this case, but it's interesting. Good luck with the poor girl.
