My mom is also interested in schnauzers, westies, and scotties, which are all a bit too small for my immediate liking, but are all very cute!

I like schnauzers but they have a very high prey drive

Definitely, but with that theory, couldn't a dog that is mixed inherit multiple health problems, from two different breeds? (i.e. heart problems and joint issues)

Read a link from earlier post. Most litters at the shelter are not just crosses (though its sometimes claimed to make them sell better).
