Sorry for the delay in actually posting this...
Coco saw the vet and she is now on antibiotics and anti-inflammatory medications.
She's doing much better and lucky to be alive! The vet couldn't find any wounds larger than punctures but that weasel definitely tried enough to scratch up and infect the entire surface of the skin on her neck.
Looking over the flock we noticed Bubba our Muscovy drake (and Coco's "husband") was scratched up on his face - safe to say he probably had a hand in Coco's survival!

Swelling has gone down a little and she's acting more like herself every hour!
