Help! Laying or Injured?

So sorry. There are a number of problems that can cause a runny nose and eyes. I'm no expert, so I'll leave that up to someone who knows more. In the mean time you can search this site for "runny nose" and will likely get a vast number of hits.
 
Could be Coryza, CRD, wow, several things. One thing I would strongly advise you to do is to watch the rest of your birds really carefully for symptoms. LOTS of those respiratory diseases can spread through a flock very quickly.
If it were me(and I'm a panicker) I would start the rest of the flock on some antibiotics(water soluble) as a preventative measure.

I didn't see the video but it's possible she was eggbound and had a heart attack trying to lay. Or was very congested from something, though it doesn't sound like you saw signs of this till after she was gone. The only real way to tell what was wrong - and to possibly avoid the same fate for the rest of your birds if she succumbed to something contagious - is to get a necropsy done.
