Help me pick the rooster to keep?

I cull early for any signs of aggression towards humans, and don't hand feed or make 'pets' out of my cockerels. Have every person walk 'through' them at least several times each week!
It's too soon to really know who's going to be best for your flock. For the next generation, I'm with aart; size matters!
Otherwise, large single combs are possibly going to get frostbitten, but the bird will survive it. I do favor birds with smaller combs though. Feathered feet haven't been a big problem here, and I have Belgian d'Uccles!
Brahmas tend to lay fewer eggs per year, but get much larger. Leghorns lay many more eggs, but are small and wiry. Your cockerels are all mixes, but still, this might matter to you too.
