This afternoon when I went to check on my chickens, I found one of them laying down on their stomach and seemed like she had no interest in the treats. When I tried picking her up gooey stuff came out of her beak, her crop was squishy and she wasn't able to hold herself up. After putting her inside two hours later she pooped normal solid poop but, she still very lethargic.

There's also a gurgling sound coming from her. I thought it might have been heatstroke but, her comb looks normal.

almost three, once in a while especially when the weather gets hot like it is now but she lays eggs regularly in cooler weather, no fluid or swelling, and no lesions inside the beak.

I would begin treating her for sour crop.
Consider getting a fecal float to see if worms may be an issue.
A lot of times a crop that is slow or not emptying is due to an underlying condition - worms, reproductive problems, infection, etc.
