Help trouble with incubators

Hi I teach Kindergarten and this year I purchased a Pro Series circulated air incubator model 4200 from Farm Innovators. I have had it plugged in for a day and am having a hard time with the Temp. and the Humidity gauge. The directions that came with it are not very clear. I am not sure where to put the water in. I put it in one of the spots but the humidity is reading like 65-70%. I dug out my backup the Hova bator 1582 and am trying to monkey with that so I can get the right temp too.
I have put my eggs downstairs in one of the rooms in the basement to keep them cool. The lady at the farm said that they are fresh and one dozen were from Sunday and one from Yesterday so waiting till tomorrow (Wednesday) should be fine.
I am still going to run into trouble when it comes to removing them from the egg turner. The 18th will fall on a Saturday and I can't get into my school. So I am going to have to do them on the afternoon of the 17th day and hope for the best. Has anybody ever had to stop turning them on the 17th day for some reason and how did it turn out?
Please can someone help me and give me some advice/or calm me down because I am freaking out here before I can even get started.

try removing all the water then waiting at least a couple of hours before checking the humidity again.. then see what it reads

for the egg turning.. sure you can stop turning on day 17.. one day won't make a difference at all
