someone on here (actually a couple users) have evne had a rooster/tom set on eggs and mother the chicks

My male Bobwhite Quail set on eggs all the time! They are very devoted fathers and help the hens quite a bit.

Maybe not lay eggs, but I have seen some roosters "lay down" on the job. (as in sleeping in the bushes somewhere )
