Help! We have to many eggs!

We eat a lot of casseroles (you can basically throw in any vegetables you want, cheese, maybe dry bread, and I like to use some bacon fat) - we can use up 18 bantam eggs in a casserole that will last for several meals. We also eat a lot of "baked french toast" - basically bread pudding, I like it best with some blueberries in it - and again, I think I've used as many as 16 bantam eggs in a 9x13 pan.
