all ingredients at room temperature.
2eggs
1 teaspoon salt
1/4 to 1/3 cup sugar
1 cup milk
6 tablespoons butter
beat these until well incorporated with each other
2 cups of flour
2 teaspoons of instant yeast. (or active dry yeast)
mix until all wet
2 more cups of flour
mix with the dough hook for about 5 minutes.
(or knead by hand for 5 minutes)
oil a bowl that is at least twice the size of the dough ball.
drop the dough into the bowl and turn the dough over so that all sides are oiled.
set in a warm place to rise. I put mine into the oven with no heat.
after it is risen to double it's original size,
dump it onto a lightly floured table.
knead it about a dozen turns to get all the air out.
divide the dough into 48 equal(ish) pieces.
roll into balls and place them in rows of 6 by 8.
I use a 12" x 20" sheet pan.
after all the balls are arranged on the pan,
flatten each one so that it resembles a hockey puck.
let the dough balls rise for about a half hour.
bake at 350F for about 15 to 20 minutes.
maybe a little longer, depends upon your oven.
