Can you take a poop sample to your vet for testing of worms, coccidiosis and bacterial infection?

Green poop could be from not eating for a couple of days, but it can also be due to infection, worms, coccidiosis and disease. Do the best you can to keep her hydrated, offer the poultry vitamins as @andreanar suggested and see if she will eat for you. If she refuses normal feed after she is well hydrated, then offer some egg or tuna - sometimes a sick bird will accept one of those.

None of the vets in my area will treat chickens but her poop is back to normal now. She just keeps scratching at her beak and clicking it like she's got something stuck on it or in it. Nothing in her mouth that I can see

Inspect her ears for any infection, check her over for any lice/mite and see that her crop is emptying properly overnight.

How far into the beak were you able to see - do you have someone that can hold her and you take a close look with a flashlight?
