Hen laying once every few days

My 25 week old Black Australorp hen just started laying eggs last week. We came home and found her first egg in the middle of the coop. It was a medium sized egg and she seemed very proud of it. Then 2 days later we found another very small egg. Then it took 3 more days until we found another medium sized egg and now it has been 4 days and we haven't found any more eggs. I was wondering what could be going on? We are finding very large piles of poop where we normally find the eggs but they don't look like they have any egg type material in them, just normal (but huge) poops. She looks and acts fine, is eating normally (maybe more than normal) and drinking plenty. Anyone have any idea?? This is my first egg layer so maybe I am too anxious.

I know sometimes it takes them awhile to get going steady. Is it possible she's hiding them somewhere?
Once they lay and egg, their vent is bigger, this may account for the bigger poops.
 
Erratic laying is normal at first. Iffin it were my hen I'd be doing my best to teach her to use a nestbox for laying her eggs. Easter eggs hunts get real old, real fast.
