I see all of them every now and again rub their beak from side to side on a paving stone as if to keep it sharp.

And even though you wouldn't think it, beaks can and do itch. So sometimes it is just a nice scratch happening.

Wait, reading this, now i'm wondering what a beak trimming would be like for them? I always thought the beak was like our fingernails, I.e no sensation except in the root...

Debeaking, which is what most people are reacting to here, is probably painful, as the beaks can get cut back severely. Trimming, which can be necessary for birds with beak deformities like crossbeak, should not cause pain or too much discomfort.
