Does it matter what sex the meat bird is? Just wondering if the roos are better eating than the hens.

That's a given.

I was wondering about texture and flavor. My neighbor ordered a load, and I didn't want to find out he separated the hens and tried to pawn them off on me. I've never done the meat bird thing. We usually just butcher the standard breeds if we get hungry. If hens have the same qualities, I won't cry fowl.

No, you won't be able to tell a difference on the flavor, especially if you butcher them at the normal 8 weeks. I would think that sexual maturity could make a difference, but certainly not that early. I always get straight run, and butcher them all at 8 weeks. That way I have a good mix of sizes for roasting, frying, etc.
