Hey Grandpa, What's for Supper? Part 2

Hubby tried his hand at his Dutch oven for the first time. It turned out really yummy. It had bacon, onion and potatoes.

Tonight is out first ball zucchini from our garden

chicken fried steak fingers, fried okra, cauliflower and cheese, homemade rolls and some of the apple butter i made yesterday, and apple dumplings! (picked a bunch of apples yesterday)

Thank you so much for that! I am going to ask him to try this. We are going camping with his folks this weekend so this would be a great time to give it a try

I would love to trade recipes, he did a little internet searching but so far thats it.

The Ball squash turned out really good. Charmed (a wonderful BYC friend of mine) shared this recipe with me. http://soupbelly.com/2009/08/06/8-ball-zucchini/ I didn't have tomato or bacon so substituted mushroom and garlic. When it came to cooking it I wrapped it in foil and DH put it on the grill. It took a while longer than we expected but it was so good he couldn't stop talking a bout it!

Not sure how this will work on a camp fire (I assume that will be your heat source if you are camping) but what I would do is make sure that he gets the pot "SMOKIN" hot. This bread is done in a 475 degree oven with the pot heated for a full 1/2 hour. Try it and let me know how it works. It is always fun to experiment.

Someone gave us a very large round yellow squash (not sure what variety) so I took the center out and stuffed it with hamburger, rice, onion, garlic, mushrooms, red bell pepper and 2 jalapeno for some kick. Added a can of tomato sauce to bind it together with Parmesan cheese on top. Baked it for 30+ minutes and it was YUMMY!. Served with fresh tomato, cucumber and Mozzarella salad.

Tonight Panini sandwiches made with my new Pesto Bread, a light coat of pizza sauce and Mozzarella cheese.

Waikiki Meatballs

Ingredients
· 1 1/2 pounds ground beef
· 2/3 cup crushed saltine cracker crumbs
· 1/3 cup minced onion
· 1 egg
· 1/4 cup milk
· 1 1/2 teaspoons ground ginger
· 1/2 teaspoon salt
· 1 tablespoon olive oil
·
· 2 tablespoons cornstarch
· 1/2 cup packed brown sugar
· 1 (15 ounce) can pineapple chunks - drained, with juice reserved
· 1/3 cup white vinegar
· 1 tablespoon soy sauce
· 1/3 cup chopped green bell pepper
Directions
Preheat oven to 350°
1. In a large bowl, combine ground beef, cracker crumbs, onion, egg, milk, ginger and salt. Shape mixture by rounded tablespoonfuls into meatballs.
2. Heat oven to 350° and bake on foil lined pan for 20 minutes. Drain excess fat.
3. In a small bowl, combine the cornstarch, brown sugar, reserved pineapple juice, vinegar and soy sauce. Mix until smooth, then pour into the skillet with meatballs. Cook, stirring constantly, until mixture thickens and boils, about 5 minutes. Stir in the green pepper and pineapple chunks. Heat through. Serve over rice.
