Hey Grandpa, What's for Supper? Part 2

I took my chicken and turned it into a really good chicken potpie!!!
Super easy to make. After I get done eating it, I'll type in the recipe.

Seems like I had it for a day ..now, today ..one of the baby furry kids has a touch of the runs ..and everyone in that enclosure is mad cuz they have that one baby's poopy squish all over 'em

Poopy butt baby wasn't pleased with the bath either...

Never a dull moment here.. but the roasted chicken, soup, dressing from scratch and whatever vegetable I decide on.. should make everyone feel better.

Deep Dish Chicken PotPie
Recipe for pastry topper:
med. bowl, stir 1 1/4 all purp flour, 1/4 teaspoon salt. Cut in 1/3 cup shortening, til pea sized. Sprinkle 1 tablespoon cold water over part of mixture, gently toss with fork. Push moistened dough to side of bowl. Sprinkle in additional tablespoons 1 at time throughout rest of flour until all is moistened, form into ball. Set aside. roll out to cover baking dish. Cut slits to let out steam.

1 cup chopped leak. (3 med, or 1 large onion)
1 cup sliced fresh mushrooms
3/4 cup sliced celery
1/2 cup red sweet pepper
2 tablespoons butter
1/3 cup flour
1 teas poultry seasoning
1/4 ts salt
1/4 teas black pepper
1 1/2 cup chicken broth
1 cup half n half or milk or light cream
2 1/2 cups chopped cooked chicken
1 cup frzn peas and carrots
1 egg, beaten

step 1
Prepare pastry, set aside
2. Large saucepan, cook, leek, mush, celery, and sweet pepper in butter 4 to 5 mins or til tender. Stir in flour seasonings,. Add broth and milk all at once. Cook and stir until thickened and bubbly. Stir in chicken and peas and carrots. Pour into 2 quart rectangular baking dish.
3. Place pastry over chicken mix into dish. Turn edges of pastry under, flute to edges of dish.Brush pastry with beaten egg.
4. Bake uncovered in 400* oven, for 30-35 minutes or until crust is golden brown. Let stand for 20 minutes before serving.

I changed mine to onion, broccoli, diced canned potatoes, and some cabbage, chopped. Jim told me I should have also added corn. I also topped the creation with some shredded cheese before adding the pastry.

Oh Aneesa, thanks for asking bout the adopted kiddos... They are doing wonderfully. They have been kept togather and have also acquired a new beau. He's been taking great care of them, and they are rewarding us with an egg everyday. Well, one of them is treating us. lol
 
Ohhh. That looks good Skand. Don't forget to put the recipe over in the official recipe thread so that we don't lose it in housecleaning next time around. Which reminds me. . . I still need to create the index page for that before it becomes too much of a chore.

We had Greek tonight. I made Greek Lemon Chicken Soup (was supposed to have Orzo in it, which I thought I had but didn't so I used arborio rice instead) and Gyro's (with the ground lamb that I bought on sale a couple weeks ago). Yummy!

I'm nearly good as new today and hungry!

Reading BB's Greek feast had me hungry for lamb.

Tonight will be a marinated roast leg of lamb with a balsamic reduction sauce, garlic mashed potatoes and steamed asparagus.

Aneesa - bread or cornbread dressing? I love both.

I'm glad to hear you're on the mend, happyhen! Your dinner sounds yummy!

I'm making a herbed roast chicken, garlic mashed potatoes, and some green beans I froze from our garden this past summer.

I baked those ribs at 350 degrees for about 3-1/2 hours. And the creamed potatoes (I guess I should call them "whipped" since I whip them with my electric hand mixer) had a stick of butter, half & half, and sour cream in them. It was delicious, if I do say so myself.

And, I add a yummmm from me.. hmm how long is it til dinner? I'm sure if I try hard enough, I might get there in time, if I leave 20 minutes ago. lol
 
skand.. I'm glad the new "kids" are doing so well. I still think about the others, but it's fortunate you got the ones you did ..and I'm sure they feel the blessing.

Oh.. I've saved your Chicken Pot Pie recipe to my treasure of specials... might even try it tonight, with the leftover roasted bird from yesterday. Thank you!

The dressing was my Nannie's recipe ..Great-grandma... so I used the old wheat/nut bread and cornbread (stale, I mean.. not icky). I made my own stock, chopped 3 colors of bells, an onion, some garlic and quite a few fresh herbs from the garden.. sage, oregano, parsley, rosemary, etc. ...salt 'n pepper and so on ..and baked with a cover for about an hour. DH took his to work and came back this morning talking about how he "hurt himself" eatin' it, so I think it was all right. I had two helpin's myself..

I stuffed us on "Triplet" omelettes (11 eggs presented in 5 days.. The Triplets are doing a good job for just starting to lay!), pumpkin buttermilk pancakes, and beef bacon ..this morning, so I'm not thinking much about definite dinner plans just yet.... but it will probably be the Pot Pie
