Hey Grandpa, What's for Supper? Part 2

Started out pretty cool this morning at a balmy 39*. We got all the way up to 66*. Just north of us (10 miles) there is a chance of frost again tonight.

Chicken fried rice for supper.

Making a Carrot Cake for DH to take to work in the morning, the kitchen smells heavenly.
 
Rice a Roni and canned corn last night. Bleah.

Last night I came up with something we really liked. We aren't good at naming recipes so it will probably be called That Blueberry Toast Stuff.
I really needed to use eggs, and we were all looking for something sweet. I was thinking French Toast, but standing at the stove that long was going to be too much, so baked French toast it was! I used potato bread, it was the heartiest bread I had on hand.

Bake a pound of bacon on a foil lined cookie sheet at 350 for 15 min.
Generously butter a lasagna sized pan. You can use a smaller cake pan and just use less bread.
Cube half a loaf of bread and put in pan. Mix a block of softened cream cheese with about 1/3 cup powdered sugar and a healthy splash of milk to make it a spreadable consistency, then spread over bread. Sprinkle with blueberries--I used frozen, and about 1 1/2 cups on each layer. Top the blueberries with the rest of the loaf of bread, cubed. Then another layer of blueberries, then chop the bacon and sprinkle on top.

Mix a dozen eggs, a dash of salt, sugar to taste, vanilla and couple glugs of milk. pour this over the bread, covering all you can. cover and bake at 350 for 30 min, then uncover and bake another 20-25 min.

We loved it! The only suggestion I got was for more bacon. I personally didn't think it needed more, but I might divide it and put some on each layer instead of all on top. I'd also add some nutmeg to the egg mixture, I just like nutmeg with my blueberries.

Tonight will be nachos.

Yep... that's pretty much what I do.

I didn't realise zucchini bread was a thing! Googling now.

I once brought chocolate zucchini bread to a 4th of July bbq. I like it and thought others would, too. I saw one woman sit down with a big slice of it on her paper plate and gleefully dig into it. There was such a look of horror on her face, and she never took another bite. I felt kind of bad because she obviously thought she was getting chocolate cake. Oh, well. I still really like it, but I guess it's not for everyone.

Un stuffed cabbage tonight. Pretty much everything that goes into stuffed cabbage rolls, Only just chop the cabbage, and add it to the meat & tomato sauces. This'll be a first for me.

Do you mix it in with the meat or just add it to the meat/tomato sauce mixture?
 
Meat &Garlic & onion gets cooked. Then the tomato stuff & water gets added. Chopped cabbage mixed in & stovetop 20 to 30 minutes. The recipe didn't include any rice in it so I'm going to make some as a side dish
 
Tonight we're having Beef Stroganoff . Going to make pasta noodles and rice to put it over. Going to add a pan of cornbread also.
