Hey Grandpa, What's for Supper? Part 2

DH and a friend were doing errands on Friday and he stayed the night. I made oven stew so they could eat whenever they were ready. He raved about the stew and had 2 bowls full. I thought everyone was done, so I put the leftovers away. I offered pie and he said he was debating having another 1/2 bowl of stew, I regretfully had to tell him that I put it away already and he was going to have to have warm apple pie with ice cream. He had leftover stew for lunch on Saturday.

found some split breasts on sale. I'll stick them in the crockpot with a can of enchilada sauce that got dented the other day when we were cleaning the garage and we'll have enchiladas for dinner.
 
Thank you. They're so yummy and easy. I use canned green sauce. If I'm way short on time, canned boneless chicken. Doing that, I can have two pans in the oven in less than 10 minutes, unless the locusts ate all the shredded cheese and I have to shred more. While they're baking I chop tomatoes and make guacamole, put out sour cream and salsa and we're good to go. Plus, they're great to keep in the freezer for when you want to gift someone with a meal.
 
I make a 9x13 pan of enchiladas and freeze what we don't eat for DH to take for lunches. He gets to choose from beef or chicken. I freeze the extra canned green enchilada sauce also, as he likes to add extra after it is rewarmed. All he has to do is grab a little container of sour cream.

I made roasted pork enchiladas, but that got only an "it's OK".
 
That reminds me. I have stuffed peppers in the freezer! yay!

We are on the last day before grocery shopping day.
At our house, when you are out of cheddar, you are out of food.
 
The last time my brand of cheese was on sale I bought 4 pounds of cheddar, 1 pound of Colby and 2 pounds Mozzarella.

@3goodeggs I think I can relate. Good thing we moved back to Wisconsin. Although Wyoming had a pretty good brand of cheese from Oregon that the stores carried. I heard that the Oregon couple that started the brand were from Wisconsin - but that is probably just a urban legend...
 
3ge, good idea! I'm defrosting some stuffed peppers for tonight. They will go good with mashed potatoes and carrots.

We had BLT sandwiches for lunch. Still picking tomatoes.

I'm having Crockpot Smothered Pork Chops.
For some leftover mashed potatoes that I'm trying to figure out how to fix up. Will also have some broccoli.
