Jim called me while out shopping with my friend today, bring home bacon. We have too many eggs. If I had spare egg cartons, I'd take them to the shelter. But, we dont, we're to the point of using a butter tub, all the lidded cartons, then all of our half cartons. My egg tray in the fridge, his fridge is holding 4 dozen. The bator's full, the hatcher's full. Does anyone want some eggs? we have all colors, all breeds, you can either eat them or hatch them. lol He counted the other day, we have 42 laying hens... that's one's that are laying daily, we still have over 30 waiting to lay in a month or so.... plus all the babies.... the banties..the pheasants...lol notice how I can keep going...
lol You should see it! I tried offering my friend today some eggs, she wont eat eggs. And as she put it... eggs where she knows what the mom looks like, arent to be eaten anywhere around her. And, as an added bonus... my kids know who laid what egg. They know by looking at the color, and size, which hen laid which egg. Big, dark olive green, stoogie. Big brown with small reddish flecks... 'Lyssa hen... bright neon green, somewhat smaller then stoogie's, that one belongs to whitebeard, etc, etc.
So it makes it hilarious to watch Sharon as the girls tell her.. we had sausage and 'Lyssa hen eggs for breakfast, Sharon, would you like some sausage and 'Lyssa hen eggs too? lol She's trying soo hard to not gag... lol
We had some of the best BBQ in the state, with their delicious hushpuppies, and my coleslaw. Well, I may have cheated... A LOT... but I did contribute to the meal.

Oh yummy! Please post the Mediterranean lamb and white bean soup when you make it next. I just may have to get TWO legs of lamb at the store next time it's on sale so that I can try that recipe as well as Cknmom's!
I'm with Redfeathers, Skand. I don't have enough layers, but unlike Redfeathers, I have been forcing myself to eat the store eggs. But, now that I know what I know, that involves buying the pastured organic eggs for $4 - $5 a dozen, depending on where I get them. If you guessed that we're not eating many eggs, you'd be right.
Consequently, I have probably 20 egg cartons taking up room in my pantry, largely because there used to be a day when I had so many eggs from my 3 girls that I was giving eggs away left and right and needed the cartons to do that. One girl is laying 3 - 4 eggs a week now and the other two are doing the squat from time to time, so
I'll actually get some eggs again. Since my girls are nearly three years old, I'm not expecting much.
But, I sure wish I could unload all these cartons on you!
