Hey Grandpa, What's for Supper? Part 2

Love anything one pot, and Ken's a huge fan of soups, stews and casseroles so that works out well for me as well, ROTB!

Guess what I did last night!! Guess! Okay, sheesh, you are all slow guessers! For the first time my entire 66 years I poached and ate an egg! I'd always revolted against it - what's an egg not fried in butter? Besides, I'd seen those bits of white stringy stuff floating on top of a pot of hard cooking eggs when one had a hidden crack in it, and YUCK! Ken was gone, so I thought I'd bite the bullet and try it. Tastiest bullet I think I've ever eaten!!

This has been a banner year for me!! Asparagus, roasted Brussels sprouts, goat cheese souffle, (had that on the cruise for the first time - YUM) and a perfect prime rib, which I'd eaten many times but never tried to cook at home. Wish I could have my life back and figure out what else I must have missed that I would have loved!! We grew up eating only what Ma liked, and did we get the short end of THAT stick as far as variety goes. Oh, don't get me wrong, we ate very well - casseroles, pig cheeks, chislic, Ma's amazing fried chicken, pork chops, beef and pork roasts, walleye, venison, pheasant , and a huge variety of potatoes cooked every way possible, to name a few! But Ma's idea of veggie sides was sauerkraut, corn, beans, peas, tomatoes, cukes, beets and squash. Never broccoli, cauliflower, asparagus, sprouts, or any of that kind of thing. What a shame!

Now I can add poached eggs to my list!!

growing up, we poached egg in milk and then served it on buttered toast from home made bread.

What a treat!

I guess I'm lucky we grew up eating a wide variety of veggies. It's due to my Mom, I guess. She grew up eating pretty much corn, green beans and peas. Somewhere along the line she expanded her tastes, us kids grew up always eating lots of veggies. Course, since I grew up that way, it was just normal for us. Friends that came over for dinner were always kinda uncertain, though. I remember friends who only ate "salad"--iceberg lettuce and tomato. Only veggie they'd eaten besides the canned stuff. Some of my kid's friends have been exposed to new veggies here also.

Speaking of which, we had a big pot of Swiss chard tonight. Little bit of bacon and onion, some vinegar and salt--yum! We also had fried fish and garlic cheese bread.

Tonight is what we call "Special Chicken". It's based on Betty Crocker's Honey Ginger chicken. With roasted yams and salad.
 
Rosemary/Thyme Balsamic Roast Pork with sweet potatoes, onions & carrots. Maybe some homemade bread.

Last night was Homemade Pizza. leftovers for lunch today
