Hey Grandpa, What's for Supper? Part 2

I think I have Ken about talked into taking me to El Tapatio's in Powell for the best smothered chimies on the planet!! AND fresh daily made refried beans....oh, um, maybe I better rethink that. Hmmmmm
 
Very June-Gloom in my part of the world... Perfect for cooking. I spent the day making a pot of beans, cornbread, rice, buttery quinoa noodles & a peanut butter cake. (*note; I'm not sure why my PB cake is always dry. I've added an extra egg & sour cream, but it doesn't seem to help. I don't want to put a pudding packet in it because I'm trying to keep it as "clean" as possible. Any ideas?)
 
Last night I made chicken with mozzarella cheese and tomatoes, mashed potatoes and green beans. Tonight I am thinking grilled filets , left over mashed potatoes and sweet corn.
 
Weds and Thurs were cornbread casserole, pork rib tips in homemade honey bbq sauce and a kale salad.
Tonight the boy is taking us out to dinner. Dunno where yet
