Hey Grandpa, What's for Supper? Part 2

I can always search it out if you can give us a title for the recipe. I don't want you typing if it's not necessary.

I've never registered, and I need my account number, which is on the darn label. Problem is, my magazine always comes wrapped in that thin plastic-with label on that...of course I don't keep that. It's actually not too long to type out-wish I could get pictures for you though!

Loaded Vegetable Beef Stew

prep time: 40 minutes

cook time 8 1/2 hours

yield: 12 servings- 1 1/3 cups each

Ingredients:

8 bacon strips, diced

3 lbs beef stew meat, cut into 1" cubes

6 medium carrots, cut into 1" pieces

6 medium tomatoes, peeled and cut into wedges

4 medium potatoes, peeled and cubed

3 cups cubed peeled butternut squash

2 medium green peppers, chopped

2 tsp dried thyme

2 garlic cloves, minced

2 cans (14 1/2 oz each) beef broth

6 cups chopped cabbage

1/2 tsp pepper

In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. In the drippings, brown beef in batches. Refrigerate the bacon until serving.

In a 6 QT slow cooker, combine the carrots, tomatoes, potatoes, squash, green peppers, thyme and garlic. Top with beef. Pour broth over the top. Cover and cook on low 8 hours.

Stir in cabbage and pepper. Cover and cook on high for 30 minutes or until cabbage is tender. Sprinkle each serving with bacon.

This recipe is out of Taste of Home magazine-I haven't tested it yet, so can't guarantee times, etc...but I'm cooking the bacon as we speak

I was kind of bummed that I didn't have green bell peppers-when I was at the store, I picked up two red ones (on sale

) because I was going to use them in a roasted veggies side dish, but couldn't remember needing the green ones....for some reason was thinking the red ones would work in the stew-which they will, I just don't have any green color in it

I had a wonderful day, but cooking wasn't a big part of it. I did all my weekend chores yesterday which left me time for a nice long coffee break this morning along with MTP, my usual Sunday morning routine. Then I cleaned the carpeting in the master bedroom and spent the entire afternoon out in the backyard with the chickens while sipping a cup of tea. It was sunny and just warm enough that I wasn't too hot with a sweatshirt on. Little Ruthie, the RIR, sat in my lap and fell asleep.

So, come dinner time, I whipped up a quick Chinese Chicken salad. I had already prepared the chicken, so it was only a matter of a little chopping and stirring.

What a nice day!

The only thing I wasn't sure on, was the butternut squash-turned out kind of mushy...though I did cook a tad longer then the 30 minutes, on high. It might be something you would add halfway through cooking time.

Still have some left for leftovers-my crockpot was plum full to the top when it was done cooking though

I made some Crispy Onion Chicken (magazine recipe that I tweaked for more healthy options) ..fried green beans ...and mac 'n cheese. We had leftover Rosemary/Cheese biscuits from breakfast, so they went along with...

Tonight.. some spicy chicken, veggie chow mein, and something else ..not sure yet

Its a brisk 7 degrees here and a hot apple turnover would hit the spot!

We had a company dinner last night. DH got a safety award and a coat! So I didn't have to cook. The prime rib was great.

Tonight... Tacos!

My dinner is almost done ..and I'm about to shoot poor Sooky in the leg again ..my little Stinkpot rescue has an RI (someone left the bathroom window open and the draft got him sick.. poor baby).

And these two hooligans showed up, today.. I named 'em Marianne 'n Ginger!
