Hey Grandpa, What's for Supper? Part 2

Hi guys!..well..we call it "Amish"..not really sure if it is actually Amish though..lol...here it is:


6 eggs, beaten
1/3 cup sugar
1/3 cup cider vinegar
1 teaspoon salt
4 cups cooked elbow macaroni
3 hard- cooked eggs, chopped
1 cup cubed cheese(your choice...we use Velveeta or cheddar)
1-1/4 cups cubed fully cooked ham
2 celery ribs,thinly sliced
1 medium onion, chopped
3/4 cup sweet pickle relish
3/4 cup sliced stuffed olives
1/3 cup mayonnaise

In a saucepan, combine the eggs,sugar,vinegar and salt; cook and stir over low heat for 10 minutes or until mixture is thickened and a thermometer reads 160 degrees...Cool completly, stirring several times.
In a bowl, combine the macaroni,hard-cooked eggs,ham,cheese,celery,onion,pickle relish and olives.
Stir mayo into cooled egg mixture; pour over macaroni mixture.
Stir to coat. Cover and refrigerate for at least 2 hours.

) It took me longer than I thought it would and I had nothing thawed out and no plan. So what do I do? Well get on BYC of coarse! I saw your recipe and thought, wala! Dinner. I don't have any enchilada sauce but found a quick and easy one on line. So Thanks Nijapoodles!

Thanks to you again Ninjapoodles! My family LOVED it! I did add a cup of cooked rice to the filling to stretch it a little further. My picky teenager had seconds and DH had it for breakfast. I am having the last one for lunch! The enchilada sauce recipe I found on-line worked perfect with it.

Now, what to have tonight.....
 
What started out being Fish Curry ..kind of lazily (on my part) became Fish Biryani.. maybe some fresh naan, if I can get over being lazy/tired ..and a salad or some palak paneer (spinach w/ fresh cheese).

DH took leftover s'ghetti to work...


Btw.. does anyone know a less painful way to get the seeds out of a pomegranate? Picking away at the pith is making the skin just under my nails hurt... and the Zoo kids that can have some are getting very impatient with me

Yup. Trader Joe's sells them already picked out.

I use a spoon and dig 'em out in a chunk, then separate from there.

I'm not yet sure what I'm making for dinner. The family is coming and going at different times. I was going to heat up some frozen chicken sandwiches and went out to the garage fridge to bring 'em in the house only to find an empty box in the freezer.

I don't have any leftovers in the fridge so I'm going to have to get creative here real quick!​

menageriemama - Yummm! Bean soup sounds perfect in this nasty weather! That has now been added to the menu for next week.

I used Redfeathers' dinner menu for tonight. Fried cabbage, sausage and homemade egg noodles with homemade Bohemian rye bread. Yummm! I have just enough left for my lunch tomorrow.

Tonight it's pork chops, applesauce, maybe something with sweet potatoes. Will be shopping all day

It's my weekend to do bulk shopping and hit up the butcher, etc. ..so I'm not sure what dinner will be just yet. I'd like to try a spinach and gruyere recipe that I found in some mag, but not sure what would go with that ..and still be something that DH will eat (or not be bored with)
