Cheese burgers and cheese mac and a lecture for standing up and cooking when I was suppose to be sitting with an ice pack. LOL

Like you, I often only have time to read my subscribed threads, so I just happened upon this one yesterday, even though it had been going on since earlier in the week. Just make sure you're not eating any of your delicious Hey Grandpa dinners while reading.

I hope you heal quickly. Knee surgery isn't a pleasant thing.
 
There may be some Enchiladas Verde around this camp today, if I can get inspired to peel husks off tomatillos and do all the other necessities

I'm glad to hear you're doing OK Zookeeper9000! I had knee surgery in 1992 and it took me a while to heal. That'll teach me to not go skiing in a blizzard.

Odd thing is that it flares up every once in a while, usually during sudden weather changes.

Cupcakes is a perfectly acceptable dinner, especially when you're healing from surgery, right?!

I didn't do so well myself in the dinner department. I had a leftover tamale for a late lunch and wasn't hungry when I left for church. That was OK, knowing that we do wine and cheese hour afterwards where I enjoyed some chips and salsa. I couldn't be bothered to wander over to where the cheese was.

I have some brie and raspberry appetizers in the oven right now that will finish off the rest of my dinner.

is it OK if i make a version of this, but altered? My idea is : "Wow, Delicious Dessert, Can i have the recipe?" or something like that. Pretty much like this only for desserts. And if you know the recipe, you are supposed to post it. Can i? Please?

I would love to learn how to make desserts besides ice cream (scoop it into a bowl- that does not count as cooking really.)

baked guinea last nite... Didn't come out tasting near as good as it should have... Havent the foggiest on what went wrong... Probably that I didn't consult you guys with the recipe... lol
Someone, quick! I need a really good guinea recipe!! well, not quick, but soon! lol
 
skand.. how is the bird overall.. small, medium.. is the meat "stringy" or similar to chicken.. how game'y is it, if at all... and so on? We had guineas when I lived on our farm in GA ..but we didn't eat them (not sure why.. we ate everything else ..well, minus the cats and dogs

I'm wondering if it wouldn't benefit from a good buttermilk soak prior to cooking.. and if it's big enough to dunk in some seasoned flour and fry up. Or... marinate it in some papaya/mango and then rotisserie it. Orrrr.... just smother them in a light gravy with onions, mushrooms and a slight squeeze of lime/lemon.

Something or someone will be roasted.. as I made a huge thing of rice last night and plan to "spiffy" it up and serve it as a side to whomever gets roasted, today.

spiffy* consist of adding some oil to a pan, a few chopped onions and minced garlic ..or just shallots... some cooked orzo or broken vermicelli, and julienned carrot or a few petite peas ..or both.. optional golden raisins. You can add whatever you like, really. Toss the onion, etc. around for a bit ..til tender... and then add the rice and toss that, too. It's kind of a pilaf kind of deal.. just twice cooked
