Hey Grandpa, What's for Supper? Part 2

cknmom.. I watch out for all of the 'ites, 'ates, 'iums and 'ols. There's probably more ..I know 'em when I see 'em ...but those are big ones that will trigger a banger migraine within the hour of consuming whatever. Also, artificial colors and flavors get me.

Backyard Buddies... I just made a plain ol' cheese cake. DH didn't want me to do any fruit or infusions ..and he still thinks it's ALL for him

skand.. do you think your yeast may have fizzled out? If I don't use fresh yeast ..those packets can be icky, especially... sometimes I don't get a good rise.


DH is going back on graves tonight, so I'll probably be up most of the night ..getting readjusted to him not being here. I'm gonna make some nutty bread for his lunches ..and maybe bake a yellow cake with chocolate frosting, too. (He's been on a sugar kick lately, so he's made lots of requests.) I have some laundry and a triple cage change/rotation that needs to be done for Phoenix.. PhatBack.. and River, too ....so I'll be too busy to start at every little noise I hear and all that mess. (It always takes me a few days to get used to whatever his schedule is... blah!)
 
Good luck with the shift change. I know I had a hard time the first time Jim starting those darned 2nd and 3rd shifts. So glad he's finally back to somewhat normal hours, even if it did happen only after he broke his neck 4 yrs ago. He still has flashbacks that cause his schedule go haywire for a month or so. He's at least learned to not wake me up to talk to him. lol

Not sure what it was with the yeast tonight. I might have not had it in a warm enough spot, it was kinda chilly throughout the house today. It also could have been that I was rushing it. For some reason, Ive just had a hard time this year getting my doughs to rise. Ugh! Ive even changed brands and packaging, starting to think it's just me!
Think tomarrow, I'll do beef stew with either buscuits or cornbread. Save myself the aggravation with yeast for a day. lol

Beef stew sounds GOOD! Maybe I'll try to find some good beef cuts at the butcher tomorrow. It was grocery week, but I didn't do my usual "full run.. all in one day" this time ..instead, I spread it all out over the last 3 days ..and I still didn't get to the butcher

I have a sickly fur baby though, so that's part of me not staying gone from home too long. Bella is just an old gal ..and her body is betraying her

Roasted chicken, spinach, potato/corn chowder and fresh bread for us, last night. It's actually cold here ..even for me... and the chowder hit the spot!

Made the beef stew last night with homemade cornbread. mmm tasty!
Tonight is still being thought about. lol Hopefully something good and quick. lol
Thought about doing guinea, but Alyssa has speech after school, so I'd end up rushing it


oooo corn chowder sounds like a plan!
Boil potatoes, add 2 cans evaporated milk, butter, add 1 can cream style and 1 can whole kernal corn, salt and pepper to taste.

I'm cooking too!

Last night was spaghetti and meatballs. Tonite I think taquitos with cheese and salsa.

BB- I thought that the recipe I made with my lamb bone was sctch broth-I know that's what I had had in mind for it. What I ended up making was


Shiner Lamb Stew

1T. oil
3LBS lamb shoulder, cut into 1/2" cubes(I just used the bone and some lamb I had in the freezer)
1C. shiner bock
1/4C.+1T.lemon juice
15 oz. tom.sauce
3t.worcestershire sauce
1/2t.garlic powder
2t.dry mustard
1 1/4t. Chili pwd.
1/4t. salt
1t. pepper
2T.honey
1/4C.chopped onion
1t.paprika
3med.carrots,sliced
3 celery stalks, sliced
1 Lg. baking apple, cubed(with skin)
1 med.onion, cut in wedges
1-28oz can whole tom.
15 med. mushrooms, sliced
1 med. zucchini, sliced

Heat oil in dutch oven, brown lamb. Add beer, juice. Cover, simmer 20-30 min.
In med. pan, mix ings. from tom sauce through paprika. Heat to boiling, add to lamb mixture.
Simmer stew uncovered 30 min. to reduce liquid; add carrots, celery,apple, onion wedges and tomatoes. Cover, simmer 1 hr. stirring occasionally to break up tomatoes.
Add mushrooms and zucchini, cook 10-15 min. over med heat.

The aroma from this was out of this world! Everyone wanted to eat way before it was done!

Eggs in a basket! My son is now 14 and this has been his favorite sinse he was old enough to eat! He still asks for it. I add a slice of cheese and call it toad- in- a- hole! My DH loves them too.

Tonight is our bi-monthly trip to town for taco tuesday (and a draft beer!) I think tomorrow I will try skands recipe for Corn Chowder! Thanks for sharing.
 
hi..for the eggs in a basket recipe...do you toast the bread first...then put it in the pan with the eggs?...could you please explain how its done?...thanks!, Wendy
