Hey Grandpa, What's for Supper? Part 2

Quote:
I've not yet tried it, but just Googled it to see if others have. Sure enough, there're recipes and photos.

We love lamb and enjoy it roasted or in chops, in Greek and Mediterranean food. I have a Persian lamb and lentil stew recipe somewhere around here if you're interested.

Tonight we are having Crockpot Beef & Broccoli. It is sooooo yummy and easy!!

1 1/2 lbs. boneless chuck steak, sliced into thin strips (I used London Broil)
1 can condensed beef consomme', undiluted
1/2 c. oyster sauce
2 Tbsp. Cornstarch
1 bag (16 oz.) broccoli florets

1- Place the beef strips into 6 qt. crockpot. Pour consomme and oyster sauce over beef. Cover and cook on high for 3 hours.

2- Combine cornstarch and 2 Tbsp. cooking liquid in small bowl. Add to Crockpot. Stir well to combine. Cover, cook 15 minutes longer until thickened.

3- Poke holes in broccoli bag with fork. Microwave on high for 3 minutes. Empty bag into Crockpot. Gently toss beef & broccoli together. Serve over cooked rice.

Easy way to cook rice (if your not using minute rice). Put 1 part rice with 2 parts water in oven proof pan with a lid. Bake at 350 degrees for 1 hour. Turns out perfect everytime!!

That crockpot beef and brocolli recipe sounds very good! My hubby would love that...except it would have to be spicy...maybe I could add some chili's. Thank you for the great idea!

Back Yard Buddies...the bagel recipe is just a basic one I found online. It's the first time I made them and they were very easy and turned out wonderfully. I'll try to find the recipe for you.

joshplus10.. I have not tried the Adobo on Lamb, but I have eaten Jerked Goat (that's tricky) and it's pretty good. Adobo and Jerk are very similar with some of the spices, btw.

...oh.. and Welcome to the kitchen! I'd love to have your Chile Verde Tamale recipe!

skand.. anything Beef can be Lamb, and vice versa, I've found. I prefer Lamb over Beef cuz it's usually more tender, but it is an acquired taste. And Goat can be substituted for Pork, sometimes ..not always ...but the texture is similar.. to me, anyway.

I think I'm still on strike.. but we'll see how the day progresses

Chile Verde Tamales for Aneesa's Muse

Boil 4 dressed roosters. Reserve the both for mixing up the masa. Pick all the good meet off the carcasses and throw the skin and soft bits into the dog dish.

In three or four tablespoons cooking oil, brown a quarter cup of flour. Slowly wisk in a cup of both to make "gravy."

Remove the skin and seeds from roasted green chile to give about 3 cups of flesh. Wash hands thoroughly, then wash hands again.

Blend chile with three cloves of garlic in just enough water to make a thick slurry.

Add chile slurry and rooster meat to the gravy, salt to taste, and simmer on low while you feed the animals.

Mix masa and broth to acheive a soft paste. Spread a 5 by 8 inch patch of masa, roughly the thickness of a chewy sugar cookie, onto squares of aluminum foil. (Please note that corn husks are either a lot of trouble and. unless you prepare your own, a lot of money.) Spoon a liberal amount of the meat mixture onto the patch. Fold the aluminum square lengthwise until the edges of the patch come together, then seal up the aluminum pouch on all sides.

Poke holes in an aluminum pie tin and place it face down in an 8 or 10 quart stockpot. Repeat for each set of 15-18 pouches. (Please note that a bigger pot will yield uncooked tamales on top.)

Put only enough water in the stockpot to immerse the pie tin and no more.

Layer in the pouches, cover, and raise to a boil. Allow 15 to 20 minutes at a slow boil, ensuring that the pot does not boil dry, then turn off the heat and allow the tamales to coast while everbody takes a bath before dinner.

Freeze leftovers.

Wow! joshplus10... thank you sooo much! I am salivating

(..and especially, thank you for giving me an alternative to the husks ..they are very hard to find in good quality ..and for a decent price)

I may have to dust off the inc'y ..to raise up some meat birds

Super tonight cheese ball, crackers, and shepards pie (some kind of party that my daughter had).

Got a recipe for tomorrow that I will be trying.

1 can of coke
1 can of cream soup (mushroom is nice)
1 roast

mix coke and cream soup throw in your roast add your your onions, tators and carrots as well as your choice of spices. Cook it slow and long and eat.

My neice said it is really good so I am going to try it. I am going to use stew meat and sear it first. Then slow cook it with the coke and soup and onions and have it over brown rice, with a veggie on the side.

Its sleeting, or raining ice, freezing rain, whatever the word for the day is. lol
