Hey Grandpa, What's for Supper? Part 2

Cherry wood is good, I have had that at a friends house. Hard not to when I live so close to Door County, lol!
From what I have heard, pecan is good, but it is very pungent so use it sparingly. my friend who smokes a lot of stuff uses it as an accent with Apple wood, which is fairly sweet.

Most fruit woods are good for smoking, esp with fish.
I haven't a clue about using nut hulls.

Mesquite is quite strong. It is best used on large cuts of meat, such as a pork butt or brisket, especially since with those you are shooting for a heavy bark.

The trick to mesquite in other applications such as ribs, is to let the wood pretty much ash over before adding the meat. You want to have a thin blue smoke, as compared to a heavy orangish smoke.

With this brisket today, it's getting a full on heavy smoke, and will have an excellent smoke ring and bark.

Joe, or anyone else that smokes meat...

I have pecan hulls and read they're good to use in a smoker. Thoughts? I only have a little electric smoker at the moment.

How about cherry wood? Honey helped someone take down an old cherry tree and he brought branches home. good for smoking?
I do not know about pecan hulls, but cherry wood is good.

The brisket is going long enough so the different wood smoke will make a difference. Stuff has to smoke longer than two hours for the smoke flavor to make a difference.

I have a propane smoker that uses soaked wood chips. It does not take very much wood for smoking so the small amount that they sell at some stores works fine. Several years ago I bought a box of cherry wood from a place in Oregon. It was shipped to me and I still have a lot of it left. It was a bulk sale.

Thanks for the input folks! Appreciate it. I've not used this smoker yet, but am looking forward to playing with it. We have a lot of pork, so I'll try different woods and see how it goes.

I saw on a cooking show that the BIG, NEW thing for chefs is making grilled cheese an Adult meal. They made such a big deal about improving the sandwich that I had to watch the show to see what they did. They "improved" it by using a medium cheddar cheese instead of American Cheese, and sprinkling green onions inside. I have been doing that forever! That is how my mom made us grilled cheese sandwiches when I was a kiddo 40 years ago. I never realized that I was a trend setter...
