Hey Grandpa, What's for Supper? Part 2

Last night was an "I haven't taken anything out of the freezer and I don't want to drive to the grocery store" night. So I made some mexican style rice and a salad and we steamed some frozen chicken tamales from Costco. I don't have any idea why I bought tamales. Neither my husband nor I really like tamales. Too heavy, too much masa, too dry. So .... the chickens are eating mexican for the vast and unforeseeable future.

I will do so so much better tonight.

Be careful with prepared food--chickens are sensitive to sodium--too much is very bad for them.

You can still feed them salty stuff but not much at a time.

Yes, thanks, I never feed them pre-prepared food because we eat very little of it ... too much salt, like you said, plus I'd rather cook so I know what's going into our food. I fed them 1/4 of one tamale this morning. It was about 2 tablespoons chopped up. I have 1/4 left and it will be a few days before I feed them that. The remaining 8 tamales are going in the garbage.

LOL. I bought these frozen from Costco. I've never made a tamale in my life, but, yes, yes, I probably would be really bad at it. Not sure why I even bought them. I don't especially like tamales (my friend highly recommended them). I'm not much of a Mexican cuisine fan in general, although I like certain aspects of it.

A tamale made by an experienced native Mexican can be a thing of wonder. I judge a good Mexican cook by their rellenos.

Yeah, about 1/3 of all the restaurants in our city are Mexican. Lots and lots and lots to choose from. My main gripe is that everything tastes the same, whether its an enchilada, burrito, chimichanga, etc. I do, however, love a good fish, crab, or shrimp taco. About as Mexican as I get at home are tacos, sometimes fish, sometimes pork or beef, and mexican style rice. I do like chiles and the spices and herbs used in Mexican cuisine.

I am drawn to Asian and Mediterranean cuisines. I can cook a lot of Mediterranean dishes, but my Asian needs work.
 
Last night was Cheap Chicken from Albertsons, with jojos and slaw.

tonight was spinach lasagna. Big pan with no noodles, little pan with noodles.

We love what we call Mexican food, although a real Mexican would probably laugh their butt off when they saw it

. Enchiladas, taco salad and nachos are the backbone of my menu planning. But it's all very Gringo-ized food.

We're having seafood enchiladas later this week, matter of fact

Night before last we had, oh how do I describe it, I browned some chicken thighs in butter, then in the same pan sautéed some garlic and threw in some broth, wine, lemon juice, cream, herbs, a bunch of spinach, and put the chicken back in and into the oven. So creamy lemony herby spinach and chicken I guess.

Last night I threw a roast in the slow cooker with celery, carrots, and leeks. Made mashed potatoes for hubby, and a green salad.

Tonight we are going to see Star Wars finally, so will eat out.
