I am cooking a big pot of chicken paprikash to be served with dumplings and either carrots or summer squash tonight. It's a snowy day favorite that gets even better on reheating.

Tonight will be pork chops, maybe mashed taters and green bean casserole. comfort food sounds good.

I baked up a batch of pork egg rolls for The Locusts as snack. I was leery of baking them vs frying, cause fried is always better, right? These came out pretty decent, actually. I sprayed them with Pam and they're decently crunchy. Not quite as good as fried, but healthier and much, much quicker and easier. They could become a staple, being that easy.
 
Wow, what a good mom. All I got for after school snacks was a peanut butter and jelly sandwich.

Last night was snapper en papillote over spinach and thinly sliced red bell pepper, finished off with a dollop of homemade pesto on top. Served with asparagus and steamed rice.
 
Oh, I still have some asparagus! gotta fix that tonight. I've got some bacon thawing out, I'll probably sautee it with onion and shrooms.

Our school offers free lunches, but the boys don't like the food much. So, they usually skip lunch and are starving when they get home. I don't usually fix them something, I let them raid the fridge and clean up the leftovers (why I call them The Locusts

) but I'd been thinking about egg rolls for a while. Usually I just try to stay out of the way so I don't get hurt

Tonight will be.....hmmmm. I have cooked chicken thawed out that needs to be used. Either a big salad or a stir fry. Asparagus would go in the stir fry. Then again, maybe I'll just fix that for lunch, just for me. No one else likes it quite as much as I do. So, dinner will probably be a big salad with honey mustard chicken.
